Graham Noonan-Chatham, Executive Chef
Graham Noonan-Chatham is the newly appointed Executive Chef at the luxury hotel, estate and spa, Down Hall, located in Essex.
Graham is prominently known for his signature dishes that champion British seasonal cuisine and these can be seen at Down Hall’s new restaurant, Garden Room.
The daily-changing menus will centre around the produce grown in the hotel’s own kitchen garden, with an emphasis on fresh and clean flavours.
Head Gardener David Parkin will work hand-in-hand with Graham, using organic growing methods to bring the best seasonal ingredients to the table.
For those ingredients that they cannot grow themselves, Down Hall will work with select and sustainable local producers and growers.
Graham’s previous 5* restaurant experience has seen him working in 3 AA rosette and Michelin-star kitchens including The Langham, Brown’s Mayfair, The Berkeley in Knightsbridge, and Pennyhill Park Hotel in Surrey.
