Chris Bartlett, Head Chef
Chef Chris Bartlett has joined Fritton Lake from The Fat Duck in Bray, where he worked for over two years, including a period working closely with Heston Blumenthal in his lab in France. Born in Ipswich, Chris originally approached owner Hugh Somerleyton to offer his time to help with his environmental charity WildEast. His new role as Head Chef at Fritton Lake, which is part of the Rewilding Britain network and at the forefront of WildEast, combines his passion for sustainable farming practices and creating delicious food.
At the thousand-acre Fritton Lake estate, traditional arable, sheep and dairy farming has been replaced with wildland where cattle, water buffalo, wild pigs and sheep roam freely. Chris’s menu is developed around food provided by the project and complemented by produce from only the very best local suppliers, creating a sustainable feast for members, holidaymakers and guests.
