Ben Miller, Head Chef
Alex Dilling at Hotel Café Royal is delighted to announce the promotion of Ben Miller to Head Chef.
The appointment comes as the restaurant proudly retained two Michelin stars at the 2026 Michelin Guide Awards.
A Canadian-born known for his creative precision, deeply personal culinary storytelling, and technical mastery across fine-dining kitchens, Ben Miller has quickly become one of the most promising young chefs in the UK.
He brings a wealth of international experience, competitive accolades and a deep-rooted respect for craft to his new role.
Beginning his career at 15 in a catering kitchen in British Columbia, Ben developed early discipline before undertaking formal training at SAIT Polytechnic.
He went on to work in Vancouver as Sous Chef at West Restaurant and later as Chef de Cuisine at Tableau, where he helped drive the restaurant’s success within the Michelin-recommended Loden Hotel.
In 2022, he relocated to London, joining the two-Michelin-starred The Clove Club before moving to Alex Dilling at Hotel Café Royal as Sous Chef.
After more than two years working alongside Chef Alex Dilling, he has now been promoted to Head Chef.
With a foundation rooted in discipline, creativity, mentorship, and cultural respect, Ben Miller is committed to advancing within Michelin-level kitchens while shaping the next chapter of modern gastronomy.
His appointment signals continued evolution for the restaurant, building on its two-Michelin-star success while nurturing the next generation of culinary excellence.
