Hector Hernandez, General Manager
Hector Hernandez is a seasoned hospitality professional with over two decades of experience across some of London’s most prestigious dining institutions.
After studying and working in the United States, Hector relocated to London in 2004, beginning his fine dining career as a waiter at Alain Ducasse at The Dorchester in 2007.
Two years later, he joined the legendary Le Gavroche, where he rose through the ranks and refined his expertise in service excellence and high-end dining operations.
In 2014, Hector took on the role of Director of Food & Beverage at The Scarlet Hotel, in Cornwall leading the department with distinction until 2018.
He then transitioned to senior management positions at two of Mayfair’s most notable venues — Amazonico and Quaglino’s — where he oversaw operations and elevated guest experiences to new heights.
Hector has now joined the Original Ivy in West Street as General Manager, with a clear vision to restore the glamour and iconic flair of the Covent Garden landmark steeped in rich history.
With his trademark energy, precision, and passion for hospitality, he is committed to refining the restaurant’s celebrated old-school service style while ensuring its continued success and modern relevance.
